Breakfast CasseroleTwo weeks ago I announced a pretty sweet contest here on my blog. West Bend Housewares (who are celebrating their 100th anniversary this year) gave me one of their Versatility 6 Quart Slow Cookers to give away to a lucky DudeFoods reader.

I was amazed to receive well over 100 entries, and even though I wish I could go all Oprah on you guys and give a slow cooker to everyone who submitted a recipe I had to pick one winner, and that winner is Courtney C. who submitted a recipe for breakfast casserole.

West Bend Housewares was even cool enough to hook me up with a Versatility Slow Cooker as well so I could make the winning recipe, and this past weekend I did just that.

Why did I pick her submission as the winner? A few different reasons actually. First of all, I absolutely LOVE breakfast food. Second, it was fairly straightforward and didn’t require many ingredients. I’m all for trying new things, but no offense, I wasn’t about to go out and buy a ton of spices just to make the winning recipe.

Aside from that though the sausage and bacon in the breakfast casserole needed to be pre-cooked, which gave me an opportunity to try out the fact that the heating base of the slow cooker also doubles as a griddle.

You don’t even have to eat the dish like a regular casserole if you don’t want to. In the past 24 hours I’ve eaten one chunk with just a fork like you would with a normal casserole, I ate some more of it between two pieces of toast like a sandwich and then ate even more of it wrapped up in a tortilla with sour cream. Congrats Courtney! Your slow cooker is in the mail!

Breakfast Casserole Recipe

This breakfast casserole combines eggs, bacon, sausage, peppers and more into a super easy to make dish that can be cooked overnight in your slow cooker.

Cook Time 8 hours
Total Time 8 hours 15 minutes

Ingredients

  

  • 32 ounces frozen southern style hash brown potatoes
  • 1 pound bacon fried and diced
  • 1 pound sausage browned and crumbled
  • 1/2 cup onions diced
  • 1 green bell pepper diced
  • 12 ounces cheddar cheese shredded
  • 12 eggs
  • 1 cup milk
  • 1/2 teaspoon dry mustard
  • salt & pepper

Instructions

 

  • Layer the frozen potatoes, bacon, sausage, onions, green pepper and cheese in the slow cooker in two or three layers. Finish up with cheese on top.
  • Beat the eggs, milk and mustard, salt and pepper together and pour over the whole mixture.
  • Cook on low for eight to ten hours.

    Yum! I wouldnt have expected a breakfast casserole as a slow cooker recipe… great idea!

      Boy scouts has used this recipe for years in dutch ovens still as good as in crock pot. For a little change add 1 dozen scrambled eggs under cheese.

        I user to be the food service director at a scout camp……….We called this “Mountain Man Breakfast” cooked it in a tilt skillet to serve about 275 scouts during each rotation for summer camp………….I have also made it many time in my Dutch Ovens……….Never ment a scouter or scout that didn’t love it

    I love the article well written my friend, straight, and to the point!!! Bravo! First time to the site. I roamed a little bit. And I love it!!! And to Courtney C. whatever you do please please please keep putting more recipes, my site is called Crock Pot King, and is more geared to saving time for people, if you have more recipes, like this. Just shout at me, and I’ll put it up.

    I just discovered your link AFTER I made an attempt at breakfast casserole from another site. I decided I would make a version of this for my “lumberjack” boyfriend and his crew. I didn’t use bacon, but that may be the trick…(as I said, I only discovered you after my lame attempt ha ha). Also, question for you…my poor boyfriend has an aversion to onions. Any suggestions?

    Keep your ideas coming. You may be my life line from now on…

      You could probably just skip the onions altogether and it would be just as good I’d bet.

    Hi! I found your site by accident and am so glad I did. I just tried a french toast casserole and it wasn’t that good. So, I’m eager to try this. I have a question – do you think hot Italian sausage would be good in this recipe? That’s the only sausage I have on hand at this time. Thanks again for posting this. It looks fabulous!

    Could this recipe be made in a smaller crockpot? Or, what I’m really asking is: can it be made for two, or all ingredients halved? Any idea how long a smaller CP would take to cook this on ‘low’?

    I made this for the guys at work last week and it disappeared in no time! It’s easy, delicious and so much nicer than having to cook first thing in the morning! I did think that the 10 hours was a little too long, the eggs were a bit on the dry side. Next time I’ll check it after 7.
