I love a good bacon, egg and cheese sandwich. In fact, I eat one pretty much every single morning. Sometimes you’ve gotta mix it up a little though so when breakfast I popped out of bed a few days ago I decided to enjoy my breakfast in egg roll form instead.
Now I know that not everyone has time in the morning to scramble eggs, cook bacon and then roll and fry a bunch of egg rolls, but you can easily prep them the day before and just refrigerate them overnight until you’re ready to cook them or even freeze them for up to three months.
The main ingredients in these Bacon Egg and Cheese Egg Rolls — as implied by the name — are bacon, scrambled eggs and cheese. I also diced and sautéed some red and green bell peppers to add to mine, but you can add anything you want to yours. Aside from that though all you need are some egg roll wrappers and you’re good to go!
If you’re having trouble finding egg roll wrappers at the grocery store make sure you look in the produce section near the refrigerated produce like the premade salads and presliced vegetables. I know that sounds like an odd spot for them to be, but that’s where they are at all the grocery stores near me.
When it comes to bacon I like mine nice and crispy, but you can obviously cook yours to whatever level of doneness that you prefer. I will say though that the crispier the bacon is the easier it is to crumble and add to these egg rolls.
As far as cooking bacon goes, I’ve always been a fan of baking mine in the oven, which is super easy and far less messy than frying it in a pan. All I do is line a baking sheet with aluminum foil and lay out the strips of bacon side by side in a single layer on the baking sheet. Then I set the temperature on my oven to 400°F and put the bacon in right away — so it’s in the oven as the oven is preheating — and set the timer for 18 minutes. At the 18 minute mark I check my bacon and if it’s done I take it out and transfer the bacon to a paper towel lined plate to cool off and if it isn’t done yet I check it again every couple minutes until it’s crispy enough for me. Again, super easy.
Not only is it easy though, one of the best things about pork is that in addition to being a good value at the grocery store is that it’s absolutely packed with protein. Eating 20 – 30 grams of protein per meal helps fuel your body and can help you feel fuller, which works out great because every three ounces of pork is packed full of 22 – 24 grams of protein depending on the cut.
Tips for making the perfect egg roll:
- Use fresh wrappers: Egg roll wrappers dry out quickly, so keep them covered with a damp paper towel while you work to prevent cracking and keep any leftover wrappers in an airtight container.
- Chill your filling: Let your filling cool slightly before rolling your egg rolls. Hot filling can soften the wrapper and make it tear.
- Don’t overfill: Use two or three tablespoons of filling per egg roll — too much can cause the wrapper to burst during frying.
How to roll your egg rolls:
- Position the egg roll wrapper in a diamond shape with one of the corners pointing towards you.
- Add your filling to the center of the egg roll wrapper.
- Dip your fingers in water and run them along all four edges of the egg roll wrapper. This will help the egg roll stay together when you roll it.
- Take the corner of the wrapper that’s pointing towards you and fold it up over the filling.
- Fold the left and right corners of the wrapper in and roll it up tightly.
Make-ahead and freezer friendly egg roll instructions:
Want to save time in the morning? You can prep these egg rolls ahead of time and store them in your refrigerator or freezer.
To refrigerate: Assemble the egg rolls and store them uncooked in an airtight container in the fridge for up to 24 hours. Fry when ready to eat.
To freeze: Assemble and arrange uncooked egg rolls on a baking sheet and freeze until solid. Transfer to a freezer bag and store for up to three months. Then, either thaw overnight in your refrigerator and fry or fry straight from the freezer while adding a few extra minutes to the cook time.
Air fryer cooking directions:
If you’d prefer to cook your egg rolls in an air fryer rather than a deep fryer or a heavy skillet just preheat your air fryer to 350°F and fry them for 8 minutes or until golden brown. Honestly though, even though air fryers are perfect for cooking so many things, egg rolls are just so much better when they’re deep fried.

Bacon Egg and Cheese Egg Rolls Recipe
Ingredients
- 2 quarts oil for frying
- 5 slices bacon cooked and crumbled
- 5 eggs
- 2 tablespoons milk
- salt and pepper to taste
- 1/2 cup Cheddar cheese shredded
- 5 egg roll wrappers
- your choice of any other ingredients I went with diced sautéd red and green bell peppers
- your preferred dipping sauce I used Buffalo ranch
Instructions

Heat oil in deep fryer or heavy skillet to 350°F.

In a bowl whisk together the eggs, milk, salt and pepper.

Scramble your eggs in a nonstick pan over medium heat until just set. You want them slightly soft since they'll cook a bit more when fried. Set aside to cool slightly.

Cook any other ingredients you plan to add to your egg rolls. I added diced sautéd red and green bell peppers.

Lay out an egg roll wrapper in a diamond shape with one of the corners pointing toward you.

Spoon some scrambled eggs and add some crumbled bacon, shredded Cheddar and any other ingredients you want into the center of the egg roll wrapper and using your fingers wet all four edges. This will help the egg roll stay together after you roll it.

Next, take the corner that’s pointing toward you and fold it up over the filling, fold the left and right ends in and roll the egg roll up tightly. Repeat for the remaining egg rolls.

Fry egg rolls in batches for 3 minutes or until golden brown.

Drain on paper towels and serve with buffalo ranch or your preferred dipping sauce.
