Bean and Cheese Burrito Corn Dogs

Bean and cheese burritos are great and corn dogs are great so obviously the next logical step was to dip a couple bean and cheese burritos in corn dog batter and deep fry them.

Bean and Cheese Burrito Corn DogsI started off by microwaving a couple frozen bean and cheese burritos, but undercooked them a bit because I wanted them to be nice and sturdy so they wouldn't fall apart when I dipped them in the corn dog batter. Plus, I knew that they'd be getting deep fried anyway, which would finish heating them up for me.

For the sticks I just used chopsticks which are perfect for corn dogs, but since my bean burritos were pretty big I stuck two chopsticks in each burrito. Even doing that though they weren't super sturdy so just be forewarned that if you use larger burritos like I did you may have to ditch the sticks one the corndogs are done in the fryer.

When it came to toppings clearly the traditional corn dog go-to of ketchup and mustard wasn't going to work because you'd have to be a sociopath to put ketchup or mustard on a bean and cheese burrito so I drizzled mine with nacho cheese and hot sauce which was perfect since it pretty much looks exactly like ketchup and mustard. I also dipped one of them in sour cream, which was equally as good.

The result is a crispy corn dog shell on the outside with warm beans and melted cheese on the inside. It's basically what you'd expect to find if Taco Bell decided to open up a stand at your local county fair.

I've said this before and I'm sure I'll say it again, but I can't think of a single food that wouldn't taste amazing after being dunked in corn dog batter and deep fried. These bean burrito corn dogs were great!

Will these replace regular corn dogs for me? Probably not. Will I make them again the next time I find a couple bean and cheese burritos in my freezer? Absolutely!

Ingredients
  

  • 2 microwave burritos
  • 2 quarts oil for frying
  • 2 corn dog sticks or chopsticks if you can’t find corn dog sticks
  • 1 cup cornmeal
  • 1 cup flour
  • ¼ cup sugar
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 egg
  • 1 cup milk

Method
 

  1. Cook burritos according to the directions on the package.
  2. Heat oil in deep fryer or heavy skillet to 375°F.
  3. In a bowl, combine cornmeal, flour, sugar, baking powder, salt and pepper. Stir in egg and milk.
  4. Slide each burrito onto a corn dog stick. Depending on how big the burritos are, you may want to use two sticks per burrito.
  5. Transfer corn dog batter to a tall glass and dip the burritos one by one into the batter.
  6. Fry corn dogs for 5 minutes or until golden brown.
  7. Drain corn dogs on paper towels, and serve with nacho cheese, hot sauce, sour cream or your preferred dipping sauce.
