Girl Scout Cookies Rice Krispies Treats

I was staring into my kitchen cabinet the other day when I noticed a box of Caramel deLites — also known as Samoas for all the non-Midwesterners out there — that I somehow hadn’t finished yet. Right next to them? An untouched box of Rice Krispies cereal.

So, I did the only logical thing I could think of — I combined them into the best Rice Krispies Treats of all time!

Girl Scout Cookies Rice Krispies TreatsNow, I’ve made Rice Krispies Treats a million times before — who hasn’t? But adding chopped-up Girl Scout cookies to them? That was a first. And let me tell you, it will not be the last!

I started off by melting three tablespoons of butter in a saucepan and stirring in 5 1/2 cups of mini marshmallows which ended up being an entire 10 ounce bag of marshmallows. If you’re using regular sized marshmallow you’ll need about 40 of them, but I prefer the mini marshmallows just because they melt so much more quickly and evenly. Either way though, just look for a 10 ounce bag of marshmallows and use the entire thing.

The recipe for Rice Krispies treats traditionally calls for six cups of Rice Krispies cereal, but since I was also adding Caramel deLites I skipped one of the cups of Rice Krispies and mixed five cups of Rice Krispies in with the meted marshmallow instead.

Then, when everything was looking gooey and glorious I took a package of Caramel deLites, chopped them up — minus the two that I ate during the process — and mixed them right in with everything else. Pro tip: Save a few cookie chunks to sprinkle on top before your Rice Krispies Treats cool. It adds a little extra crunch and makes them look even more amazing.

Once everything was mixed together I transferred it to a dish and let them cool. Ok I barely let them cool because they smelled so amazing and I couldn’t wait to eat them.

What came out was basically the Frankenstein’s monster of childhood desserts, and I mean that in the most delicious way imaginable. You’ve got the soft, chewy marshmallowy base. Then you get hit with the chocolate, caramel and coconut from the cookies. Every bite is like a sugar-packed nostalgia bomb.

Even though I used Caramel deLites for my Rice Krispies Treats, any Girl Scout cookies would obviously work. Except for Lemonades because those are just terrible to begin with…. Seriously, who actually orders those?

And now that I think about it, Trefoils aren’t that great either. Are there really that many fans of shortbread cookies out there that necessitate the Girl Scouts having two different types of shortbread cookies? Maybe I’m the crazy one here and people really do love shortbread cookies that much.

Would I make these again? Absolutely! These are dangerously good. I made them to share with my wife but let’s be honest, I ate half the pan before she even knew they existed.

If you’ve got any leftover Girl Scout cookies — which I realize is a wild concept for some of you — this is the move. And if you don’t? I guess I’ll see you outside the grocery store next cookie season, awkwardly buying five boxes from every Girl Scout I pass.

In fact, I’ve still got one box of Peanut Butter Patties left that could definitely use the Rice Krispies Treats treatment!

Ingredients

  

  • 3 tablespoons butter
  • 1 package (10 ounces) marshmallows approximately 40 marshmallows or 6 cups mini marshmallows
  • 5 cups Kellogg's Rice Krispies cereal
  • 1 package Girl Scout cookies I used Caramel deLites

Instructions

 

  • Melt butter over low heat in a saucepan.
  • Add marshmallows and stir until completely melted.
  • Add Rice Krispies cereal and chopped up Girl Scout cookies and stir until well coated.
  • Spoon mixture into a pan coated with cooking spray, cool and cut into squares.
