Ever since I made my Bacon Weave Taco I’ve been telling myself that I need to create a breakfast version of the same thing. I mean, clearly a taco shell made completely out of bacon just begs to be stuffed with scrambled eggs, cheese and diced red and green peppers right!?
Luckily, I still had some bacon leftover from a recent shipment that Hormel sent me, so for the Bacon Weave Breakfast Taco I pulled a pound of their Black Label Maple bacon out of my refrigerator and got to work weaving it together!
If you want to make your own bacon weave taco shell I have a pretty detailed explanation on creating them right over here, so instead of copying and pasting the instructions into this blog post it’s probably easier if you just check out the original Bacon Weave Taco post and follow the steps there.
Once my taco shell was done I set it aside to cool while I scrambled some eggs and added some shredded Bacon Cheddar cheese from a really great Wisconsin company called Hook’s Cheese because if there’s one thing a Bacon Weave Breakfast Taco needs it’s more bacon…. Completing my taco were some diced red and green peppers. You know, just to keep it healthy….
Overall I enjoyed this taco even more than my original Bacon Weave Taco. The maple flavored bacon and Bacon Cheddar cheese — plus the fact that breakfast is my favorite meal of the day — made this one of the more enjoyable dishes I’ve ever made.
