Slow Cooker Reuben DipIf you’re a fan of Reuben sandwiches then you absolutely have to try this this slow cooker Reuben Dip. 

It takes all the best parts of the iconic sandwich — corned beef, cheese, sauerkraut and Thousand Island Dressing — and combines them into a super easy to make dip that’s perfect for entertaining.

I originally made this Reuben Dip for a St. Patrick’s Day party years ago, but after seeing how much everyone in attendance loved it I’ve been coming up with every excuse possible to make it as often as I can since then. Housewarming parties, Christmas, Grandma’s 80th birthday, Grandma’s funeral later that year… it’s perfect for any occasion!

What ingredients are in Reuben Dip?

  • 4 cups Swiss cheese
  • 4 cups Cheddar cheese
  • 1 cup sauerkraut
  • 1 cup mayonnaise
  • 1/2 cup Thousand Island Dressing
  • 1 pound diced corned beef

How to make Reuben Dip:

Just combine all the ingredients listed above in your slow cooker and cook on low — stirring occasionally — for two hours or until the cheese is melted. Is as simple as that!

How to make Reuben Dip in the oven:

If you want to make Reuben Dip in the oven instead of in a slow cooker just take the same ingredients, combine them in an oven safe dish and bake it in your oven at 375° for 20 minutes or until the cheese is melted.

How to make Reuben Dip on the stovetop:

If you’re looking for an even faster way to make Reuben Dip than in the oven you can also make it right on your stovetop. Just combine all the ingredients in a saucepan over medium heat and cook until heated through while stirring occasionally. 

Recipe variations:

  • Swap out the corned beef and sauerkraut for pastrami or turkey and coleslaw instead to make a dip version of the popular Rachel sandwich.
  • Substitute Montreal-style smoked meat for corned beef to create a Montreal Reuben Dip.
  • Create a vegetarian Reuben Dip by substituting diced mushrooms, zucchini or cucumbers for the corned beef or by just omitting the corned beef completely.

Instructions

 

  • Combine all the ingredients in a slow cooker and cook on low for two hours or until cheese is melted, stirring occasionally.
  • Serve with rye bread and assorted crackers for dipping.
