S’mores Quesadillas

S'mores QuesadillasI mentioned back in my blog post about how to make a grilled cheese sandwich in your toaster that I had quite the overabundance of kitchen appliances covering my countertop. One of them that hasn’t gotten much use lately is my quesadilla maker, so I set out to change that. What type of quesadilla would I make though? A chicken quesadilla? Your classic cheese quesadilla? Nope! I decided to make some s’mores quesadillas!

Since I actually wanted to be able to close my quesadilla maker I couldn’t just cram a bunch of Hershey’s chocolate bars, marshmallows and graham crackers in between two tortillas and cook them that way. Instead I decided to melt the chocolate in my microwave and the marshmallows on my stovetop and then crush up the graham crackers before packing everything between the tortillas. Making some sort of graham cracker tortillas would have been awesome, but that’s WAY beyond my scope of cooking experience.

If you think regular s’mores are messy try making them in quesadilla form! Apparently I added a bit too much melted chocolate and marshmallows and a few too many crushed graham crackers, because as my quesadilla started cooking marshmallow and chocolate came oozing out the sides. Luckily I didn’t lose too much filling, and when the green light came on to indicate that my quesadilla was done there was still plenty of it left between the two tortillas.

How did they taste you ask? Spectacular! When I eat regular s’mores I often have the same problem that I have with hard shell tacos, which is that with each bite the hard exterior cracks more and more and I end up losing most of the filling. With s’mores in quesadilla form however everything is kept in place by the tortillas so each bite is just filled with tons of chocolate, marshmallow and graham cracker goodness.

    I did a similar thing with the exact same quesadilla (what? recognize that spell-check) maker. I used some store bought Philadelphia Cheesecake filling, and milk chocolate pieces.

    The quesadilla maker is actually great for cooking other things I think you’d enjoy.

    If you take some Pillsbury biscuit dough (preferably a package from the cheap four tube packs), split the biscuits into two groups and roll each group into a thin quesadilla sized sheet between slices of parchment paper. It’s easiest to fill the sheets and press the edges together before putting them onto the quesadilla maker, but make sure to spray first each side with non-stick spray just to be safe.

    Cook until golden brown (and delicious). The biscuits cook nicely and surround whatever you choose to put inside. My favorite filling so far has been a small cubed dice of swiss cheese, ham, turkey and pepperoni. I can share pics if you’re interested.

      That Pillsbury dough idea sounds awesome! I’m definitely going to experiment with that!

    Oooooo, I can imagine a fresh raspberry sauce drizzled over the quesadilla would be a nice sour touch to make the sweet not seem so overwhelming. DELISH!!!!

    I bet these’d be great made with marshmallow cream instead of melted-down regular marshmallows. 😀

    We make these over the campfire. I fold a tortilla shell in half, using mini choc chips & mini marshmallows. Wrap them up in tin foil & place over the hot coals or on a rack above the fire. Flip over after about 2 mins & cook on the other side. They are fabulous! Sometimes, we also add some caramel sauce!

      I was going to make a similar comment. We make Choco-tacos at the camp I work at. We make ours more like a burrito instead. And we use whatever sweets we have around to put into it. Sometimes we put bananas in them too.

    Marshmallow Creme and some form of hazelnut spread such as Nutella. It is a wonderful combination and takes very little heat to melt the ingredients together.
