A while back I had an idea to make an ice cream sandwich that used deep fried Reese’s Peanut Butter Cups. I still think it would be a phenomenal idea, but the only real problem is that when I want an ice cream sandwich I want something that will take me at least a few bites to finish — something like these Fruity Pebbles and Cocoa Pebbles Ice Cream Sandwiches — and Reese’s Peanut Butter Cups are pretty small.
I thought I could remedy this by buying a couple jumbo size Reese’s Peanut Butter Cups that I found at the store because I figured they’d be wider — the package sure as hell seemed wider at least — but it turns out that they were only thicker instead. Don’t worry, they didn’t go to waste as I deep fried and ate them separately, but that still didn’t satisfy my hunger for an ice cream sandwich so I decided to come up with a plan B — a Deep Fried Chocolate Chip Cookie Ice Cream Sandwich!
Now I know that you can already buy ice cream sandwiches that use chocolate chip cookies, and they’re great — to an extent. What I never really enjoyed about them is that the cookies are obviously cold and thus, not very chewy. By breading and deep frying them you get the equivalent of a chewy, fresh baked cookie, but thanks to the breading it also doesn’t just turn into a huge mess where you’re getting chocolate all over your hands.
To make them I just took two cookies, coated them in flour, dipped them in an egg wash and then covered them in panko breadcrumbs. A quick 60 second dip in some 375° deep fryer oil finished the job! The only real downfall to the Deep Fried Chocolate Chip Cookie Ice Cream Sandwich is that since the breaded cookies are warm the ice cream melts faster, which in turn means you need to eat your ice cream sandwich faster. Come on though, if the only issue with it is that you need to eat it fast that’s a pretty damn good problem to have!
