Keto Jalapeño Poppers Recipe

Just because you're following a keto or low carb diet doesn't mean you can't enjoy fried jalapeño poppers! Just swap out the breadcrumbs for crushed up pork rinds and you're all set!

Ingredients
  

  • 2 quarts oil for frying
  • 10 jalapeños
  • 8 ounces cream cheese
  • 4 ounces Cheddar cheese shredded
  • 5 slices bacon cooked and diced
  • 6 eggs
  • ½ cup milk
  • 5 ounces pork rinds finely crushed
  • ranch dressing or your preferred dipping sauce

Method
 

  1. Heat oil in deep fryer or heavy skillet to 375°F.
  2. Slice the jalapeños down the middle and then down the sides in a "T" shape so they can be spread open to fill.
  3. In a bowl combine cream cheese Cheddar cheese and diced bacon.
  4. Fill jalapeños with the cheese and bacon mixture and set aside.
  5. Combine milk and eggs in a bowl and whisk until smooth.
  6. Dip each jalapeño in the egg wash and cover in finely ground pork rinds. Repeat this process again if necessary.
  7. Fry jalapeño poppers for 3-4 minutes or until golden brown.
  8. Drain on paper towels and serve with ranch dressing or your preferred dipping sauce.
