Cheese Sauce
- In a saucepan, melt butter over medium heat and stir in flour.
- Add milk and reduce heat to low.
- Stir in Cheddar cheese slowly until melted.
Nachos
- Slice each bell pepper in half and then in half again, remove stem and deseed.
- Brown ground beef in a pan and add taco seasoning according to the directions on the package.
- Prepare cheese sauce according to the directions above.
- Line sliced bell peppers on a cookie sheet or baking tray and top with ground beef, nacho cheese, diced red onion and tomato, sliced jalapeños and sprinkle with shredded Black Creek Sharp Cheddar.
- Bake at 350° for 10 minutes or until shredded Cheddar is melted.
- Top with sour cream and serve.
