Separate ground beef into 6 equal-sized portions and flatten them out to be a little longer than your hot dogs and about 4 times as wide as your hot dogs.
One by one, take your hot dogs, place them on the ground beef, roll them up and seal the edges.
Grill over medium heat — rolling frequently — for 10 minutes or until ground beef is cooked through.
To make the jalapeño beer cheese sauce, melt 2 tablespoons butter in a saucepan over medium heat. Add 2 tablespoons flour and whisk until golden in color.
Add 3/4 cup milk and 1/4 cup light beer and reduce heat to low.
Slowly add in shredded Black Creek Double Smoked Cheddar Cheese and continue stirring until the sauce is smooth.
Add diced jalapeños and stir until combined. If you’d like a thicker sauce, add more flour (1 tablespoon at a time) and if you’d like a thinner sauce, add more milk (1 tablespoon at a time).
Assemble your Beer Cheese Burger Dogs by placing each Burger Dog in a bun and topping them with jalapeño beer cheese sauce and diced tomatoes.
