Mini Corn Dogs Recipe

These mini corn dogs are great as a snack, as an appetizer or for when you feel like bragging to your friends about how you just ate 20 corn dogs at once.

Ingredients
  

  • 2 quarts oil for frying
  • 30 cocktail franks
  • 1 cup cornmeal
  • 1 cup flour
  • ¼ cup sugar
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • teaspoon ground black pepper
  • 1 egg
  • 1 cup milk

Method
 

  1. Heat oil in deep fryer or heavy skillet to 375°F.
  2. In a bowl, combine cornmeal, flour, sugar, baking powder, salt and pepper. Stir in egg and milk.
  3. Slide each cocktail frank onto a toothpick.
  4. Transfer corn dog batter to a short glass and dip the cocktail franks one by one into the batter.
  5. Fry corn dogs for 2 minutes or until golden brown.
  6. Drain corn dogs on paper towels, and serve with ketchup, mustard or your preferred dipping sauce.
