Hormel recently sent me a bunch of bacon — 12 pounds to be exact — and this Bacon Weave Quesadilla is what I did with the first two pounds of it.
Actually, I should clarify that a little, the two bacon weave “tortillas” that I made only totaled about a pound and a half, but when you’re cooking with bacon you’re obviously going to eat some along the way, and that’s where the extra half pound went.
For the bacon weave tortillas I started off by cooking two large bacon weave squares and then placing a bowl over each one and tracing around it with a knife to create a circle. The trick with these bacon weaves is to cook them to the point where the bacon sticks together and is able to be cut, but you don’t want to cook it too much or when you add your quesadilla ingredients and finish cooking it your bacon will burn.
The cooking time will vary depending on which type of bacon you use and how thick it is, but for my original two bacon weaves I just cooked them in the oven at 400° for about 15 minutes. Then, after cutting them into circles, I added some chicken and cheese to them and fried my Bacon Weave Quesadilla in a pan on my stove for about five minutes. Completing my meal was a bowl of fresh homemade guacamole.
Overall I think that this was my favorite bacon weave creation to date. It was completely and utterly delicious. You know what though? Maybe quesadillas just aren’t quite your thing, and in that case you could also incorporate a similar bacon weave concept into Bacon Weave Pizza, a Bacon Weave Grilled Cheese or even a Bacon Weave Breakfast Burrito.

April 28, 2015 at 7:43 pm (5 years ago)We always eat uncured bacon. The goto brand we use is Applegates Sunday morning bacon. The also have good morning bacon which is made from pork shoulder and has less fat. While it is not as crispy as regular bacon, you get more bacon and it is easier to weave.
That is especially important for a bacon weaving rookie like me.

May 23, 2013 at 7:19 pm (7 years ago)One of the things I did with an access amount of bacon (Though let’s be honest… there is never an access amount of bacon) was made gigantic breakfast sandwiches. We started off by making two very large pancakes. Then baked two gigantic circular bacon weaves. While those baked, we scrambled eggs and fried sausage…. You put one of the pancakes down on a pizza pan (depending on the size of the pan it still might not be large enough) the place one of the bacon weaves on the bottom. Top with one layer of scrambled eggs, over in cheese, place sausage on the cheese then add another layer of scrambled eggs, cheese again, second bacon weave, and add second pancake. Though it may seem too much for one person to eat, it certainly was delicious to slice and share. Also the way it layers is very presentable. The optional thing we did at the end was make a homemade whiskey syrup which topped it all of nicely! Tonight however, I am definitely trying my own spin of your bacon Quesadilla, but I am adding peppers and salsa! Thanks for tonight’s dinner!

July 7, 2014 at 10:06 am (5 years ago)boyfriend and i did this over the weekend. fantastic!! we actually skipped the guac and salsa and stuck with simple tomato and onions to go with the chicken and cheese. he had the genius idea to make ranch dip with the sour cream. so so so so so good!
