The Pig Mac

The Pig MacI call this the Pig Mac. What you see pictured here from the bottom up is a 1/3 pound 100% ground bacon patty with melted Bacon Cheddar cheese from Hook’s Cheese Company on it. Oh, and a few slices of bacon as well just for good measure. On top of that is some barbeque pulled pork, a middle bun, another ground bacon patty, some more Bacon Cheddar cheese and then finally some homemade bacon mac & cheese.

This thing was so tall that if I would have added a single ounce of anymore meat I think it would have pushed the sandwich past the boundaries of even being able to be picked up. In fact, even one more macaroni noodle could have sent it toppling over onto my kitchen counter. That’s fine with me though because the sandwich was absolutely perfect already.

So how easy was it to eat the Pig Mac? The short answer is not easy at all and do you know what? I was totally fine with that. Sure, some pulled pork and some mac & cheese fell out as I was taking bite after delicious bite of it, but to me one of the true measures of a great sandwich is that it’s usually at least a little difficult to eat without making a mess.

    Not rendered bacon fat but a bacon weave bun or something
